- 1 lb lean ground beef
- 1 cup dried bread crumbs (I use panko, or toast and then blend some bread)
- 1/2 yellow onion, diced
- 1/2 cup milk
- 1 large egg, beaten
- 1/4 c + 2 T ketchup, separated
- 1 T worcestershire sauce
- 1/2 tsp dried parsley
- 1 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 1/4 tsp MSG
- 1 T packed brown sugar
- 1 T red wine vinegar
- 1 T barbecue sauce
- 1 tsp hot sauce (I recommend Yellowbird Serrano)
- Preheat oven to 350 F.
- In a bowl, combine the beef, bread crumbs, onion, milk, egg, 2 T ketchup, worcestershire, parsley, salt, garlic powder, pepper, and MSG. Mix with clean hands until well combined.
- Add the meat to a loaf pan and press down into an even layer.
- In a small bowl, mix 1/4 c ketchup, brown sugar, red wine vinegar, barbecue sauce, and hot sauce. Spread over meatloaf.
- Bake uncovered for 55 minutes.
- Let rest for several minutes before serving.
