  • 1 lb lean ground beef
  • 1 cup dried bread crumbs (I use panko, or toast and then blend some bread)
  • 1/2 yellow onion, diced
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1/4 c + 2 T ketchup, separated
  • 1 T worcestershire sauce
  • 1/2 tsp dried parsley
  • 1 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp MSG
  • 1 T packed brown sugar
  • 1 T red wine vinegar
  • 1 T barbecue sauce
  • 1 tsp hot sauce (I recommend Yellowbird Serrano)
  1. Preheat oven to 350 F.
  2. In a bowl, combine the beef, bread crumbs, onion, milk, egg, 2 T ketchup, worcestershire, parsley, salt, garlic powder, pepper, and MSG. Mix with clean hands until well combined.
  3. Add the meat to a loaf pan and press down into an even layer.
  4. In a small bowl, mix 1/4 c ketchup, brown sugar, red wine vinegar, barbecue sauce, and hot sauce. Spread over meatloaf.
  5. Bake uncovered for 55 minutes.
  6. Let rest for several minutes before serving.
