Marry Me Chicken is one of my favorite foods but raw chicken is annoying to work with, so here’s a 20-minute version with all the flavor and none of the pain.

  • 1/2 T. butter or olive oil
  • 2+ cloves garlic, minced
  • Salt, pepper, thyme, and crushed red pepper flakes to taste
  • 1 C. low-sodium chicken broth
  • Additional chicken bouillon (say, 1/2 T. Better Than Bouillon or a couple cubes of the dry stuff)
  • A small handful of sun-dried tomatoes, diced
  • A few glugs of heavy cream
  • A handful of parmesan cheese
  • 1/2 tsp. sodium citrate (optional, for a smoother sauce)
  • Cooked white rice
  1. Warm up butter/oil in a saucepan over low heat.
  2. Add garlic, salt, pepper, thyme, and red pepper. Warm for a minute or two; do not brown the garlic.
  3. Add chicken broth, bouillon, and sun-dried tomatoes. Raise heat to medium and simmer for a few minutes.
  4. Add cream and parmesan. Heat, stirring occasionally, until the cheese is melted.
  5. Add sodium citrate, if using. Stir to combine.
  6. Serve over rice.
